Spicy cottage pie with sweet potato mash

Supper tonight was a bit of an invention made up of items in the pantry. A sort of “end of the month” kind of meal when nothing is planned and there’s not much with which to work… and it was delicious. Second-helping-delicious! I enjoy spicy food so the seasoning might need to be adjusted to suit your tastebuds if you prefer less bite, however the flavour combinations work well together. 

  • Sweet potato mash

Peel one very large sweet potato and chop into rough chunks. Place in a pot of water and bring to the boil. After about 10-15mins, drain water and roughly mash sweet potato. Put aside to use later. 

  • Heat oven to 180’C
  • Spicy mince
  1. 1 large red onion, diced
  2. 500g lean beef mince
  3. 3 very ripe tomatoes, peeled and chopped
  4. 1 can butter beans, drained and rinsed
  5. 2T Woolworths Tomato paste
  6. 1/2 cup frozen peas 
  7. Salt, cayenne pepper, cumin, coriander and turmeric
  • Gently fry, on low heat, chopped onion until just soft. 
  • Add mince and fry until browned. 
  • Add peeled, chopped tomatoes and stir until well mixed. 
  • Add seasoning to taste (I added approximately 5ml of each)
  • Stir well
  • Add rinsed butter beans and tomato paste. 
  • Stir well and allow to simmer for approximately 5mins. 
  • Add frozen peas, stir and simmer for a further 5mins. 
  • Spoon the mince into an oven dish and roughly top with the sweet potato mash. 
  • Bake at 180’C for 10-15 mins. 

Serve by itself or with a salad (no feta or other cheese products in the salad)
